«Antipasti» is a traditional type of Italian gastronomic pastime consisting of an aperitif before eating. It can be served hot or cold and as such, whets the appetite without overpowering the senses. The name originates from the Italian word pasto, meaning «food» and the Latin prefix ante, meaning «before».

Consequently, in the best Italian tradition, we make our homemade stuffed pasta fresh each morning.
There are only two ingredients to a traditional pasta: flour and egg.
We always use a flour that is slightly stronger than regular flour to get a slightly thicker texture and that therefore holds its shape better. Plus, we add a pinch of salt to the dough to enhance the flavour.

Our pastas are carefully selected by our chef, Vincenzo Cancilleri.
We use La Molisana pasta, a hard-grain pasta that cooks perfectly, allowing us to serve pasta al dente.
Other pastas we serve give their name to our restaurant: Pappardelle are egg pasta made in the Belli artisan pastificio (pasta factory), located in Foligno, in the province of Perugia.
The Strangozzi, is also made at the Belli artisan pastificio, and is made exclusively with egg white and really is to die for.
